Coconut Curry Chicken

Ingredients:

1 lb. chicken
1 Green Bell Pepper, sliced
Red Bell Pepper, sliced
1 small onion, sliced
1  can of coconut milk
2 cloves garlic, minced
1 Tablespoon coconut or olive oil
1 small jalapeno (seeds removed), diced
1/4  teaspoon cayenne pepper
1/2 teaspoon turmeric powder
1 teaspoon curry powder
Salt to taste

Directions:

1. Set a large frying pan or wok on medium heat.  Add Coconut oil.

2. Chop up the onions, garlic, bell peppers and jalapeno pepper

3. Saute chicken and vegetables  in frying pan  for 5 minutes.

4. Add all other ingredients

5. Simmer for 30 minutes on a low heat.

6. Serve on top of rice

Makes 4 servings
